Avocado eggs that have been baked

1. Ingredients

    • Two avocados
    • Four eggs
    • Salt and black pepper
    • Additional spices
    • Lemon juice
    • chopped coriander, scallions and cilantro (optional)
    • Whole-wheat tortillas (optional)

    2. Directions

      • 1. Pre-heat oven to 175oC (350oF).
      • 2. Split each avocado half, then take out the pit.
      • 3. Utilize a spoon to scrape the half avocado’s center. This should be big enough to hold an egg.
      • 4. Lemon juice can be squeezed over avocados and sprinkle using salt and pepper.
      • 5. Place the avocados on a baking sheet. Then break an egg in the center inside each one. Be prepared if any egg whites fall out, so you can ensure that the yolk is intact.
      • 6. Bake the batter until the egg whites have set and the yolks are running (about 10-12 minutes).
      • 7. Remove from oven, and garnish with scallions, coriander and any other spices. Enjoy with tortillas made of whole grain (toast these in the oven at 5 mins to get an extra crunch, but it is not required).
