2. Directions
1. Pre-heat oven to 175oC (350oF).
2. Split each avocado half, then take out the pit.
3. Utilize a spoon to scrape the half avocado’s center. This should be big enough to hold an egg.
4. Lemon juice can be squeezed over avocados and sprinkle using salt and pepper.
5. Place the avocados on a baking sheet. Then break an egg in the center inside each one. Be prepared if any egg whites fall out, so you can ensure that the yolk is intact.
6. Bake the batter until the egg whites have set and the yolks are running (about 10-12 minutes).
7. Remove from oven, and garnish with scallions, coriander and any other spices. Enjoy with tortillas made of whole grain (toast these in the oven at 5 mins to get an extra crunch, but it is not required).
